Vegan Cajun Cauliflower ‘Wings’

Ingredients: Cauliflower Wings

– 1 cauliflower (cut into florets)
– 1 cup of wholemeal flour
– 1 cup of plant milk (unsweetened)
– 1 tbsp Cajun seasoning (found in most supermarkets)
– 1 tsp garlic powder
– 1/2 tsp pink/sea salt
– Season with black pepper

Ingredients: Creamy Avocado Dip

– 1 avocado (crushed/chopped)
– 1/2 a tomato – chopped
– 1/4 chopped cucumber
– 1 garlic clove – crushed
– 2 tbsp vegan mayo
– 1 tbsp lemon juice
– Season with salt and pepper

Method: Cauliflower Wings

1) Cut the cauliflower into florets (not too small) and set aside.

2) In a large bowl mix together the flour, garlic powder, Cajun seasoning, salt and pepper.

3) Pour in the milk and whisk until you have a thick batter. Throw in the florets and using a spoon or your hands coat eat floret in the batter.

 
4) On a baking tray lined with parchment paper lay out each wing (not too close together) & drizzle with a little olive oil.

5) Bake in the centre of the oven for 25-30 minutes until golden brown.


Method: Avocado dip
1) Add all the ingredients to a bowl or blender and blend briefly (or it will be too runny) until all ingredients are combined.
