Baked Vegetables in Puff Pastry

  • seasonal vegetables
  • mixed herbs
  • sunflower oil
  • ready to use puff pastry (many supermarket own-brand ones are vegan)

Method

  1. Dice, quite small, a mixture of 4 vegetables such as carrots, celery, parsnip and red pepper.
  2. Mix the vegetables with a sprinkling of mixed herbs and a splash of sunflower oil.
  3. Place the vegetables in a shallow baking dish and cover with puff pastry. Bake at 200C/400F/Gas Mark 6 for one hour.
