Veggie BBQ Menu

Tofu and vegetable kebabs

Try chunks of green, red and yellow peppers, onions, courgettes, cherry tomatoes and marinated tofu pieces, arranged alternatively on a skewer and brushed with olive oil.

Grilled portobella mushrooms

Delicious grilled au naturelle, but there are many ways in which you can tart up your mushies - e.g. stuffing them or marinating them. A quick web search will throw up lots of veggie/vegan suggestions or see our Giant Stuffed Mushrooms recipe.

Veggie burgers & veggie sausages in toasted buns

Serve with grilled tomatoes, potato wedges and BBQ sauce (see also - Easy Cheesy Burger, Little Devil Burger, Sombrero Burger and Veggie Wedges).

Corn on the cob

Leave husks on and soak in cold water to prevent burning. Grill for 30 minutes turning regularly. Alternatively, brush with coconut milk and grill.

Scrummy salad

As well as lettuce, tomato, sliced onion and cucumber, throw in avocado, grated carrot, sunflower and pumpkin seeds.

Baked potato

Wrap in tin foil and cook for approximately 1 hour (remember to put them on the barbie well in advance of when you want to eat!)

BBQ chocolate bananas

Leaving skin intact, split lengthways, stuff with chunks of dark chocolate, wrap in foil and cook amongst hot coals for 10 minutes, turning occasionally.

Strawberry and kiwi skewers

Make a mixture of vegetable margarine, maple syrup and mixed spice. Thread slices of kiwi fruit and strawberries alternately onto the skewers, brush with syrup mixture and grill over hot coals for 5-10 minutes, turning and basting occasionally. For extra decadence, serve with soya cream or dairy-free chocolate sauce! Other fruits such as mango, pear, pineapple or melon can also be used. (Recipe courtesy of The Vegetarian Society.)
