Baked Vegetables in Puff Pastry

  • seasonal vegetables
  • mixed herbs
  • sunflower oil
  • puff pastry (e.g. Sainsbury's animal free puff pastry or Jusrol)


  1. Dice, quite small, a mixture of 4 vegetables such as carrots, celery, parsnip and red pepper.
  2. Mix the vegetables with a sprinkling of mixed herbs and a splash of sunflower oil.
  3. Place the vegetables in a shallow baking dish and cover with puff pastry. Bake at 200C/375F for one hour.
